Based on the book, Your Body in Balance, by Neal Barnard, MD, FACC, in this class we were able to hear the evidence presented in how our thyroid gland regulates our body’s use of energy. If it is not producing enough hormones (hypothyroidism),
we can feel sluggish, if it is overproducing hormones (hyperthyroidism), we may feel revved up with a rapid pulse and other symptoms. There is evidence that those who follow a plant-focused diet, void of meat and dairy, are significantly less likely to get thyroid problems. There
are also individuals whose hypothyroidism and hyperthyroidism have disappeared after switching to a plant-based diet.

In this class we hear the evidence-base in how plant-rich foods are highly beneficial to the brain and may help prevent Alzheimer’s disease and other forms of dementia. We learn that a decline in brain health is not an inevitable part of aging and how we eat and live can help us protect our memory and stay sharp as we grow older. For example, research shows that saturated and trans fats (found in dairy products, meats, pastries, and fried foods) can increase the risk for cognitive decline, while eating a plant-based diet, helps decrease risks for cognitive decline through protective properties. Berries and foods rich in vitamin E, including nuts, seeds, leafy greens, and whole grains are especially beneficial.
